I have to admit I'm a Mercedes Lackey fan, having read almost all of her Valdemar books. However, there's more to them than you might think. Besides the Companions, who have a mind-to-mind connection with their Chosen Herald, there's the Shin'a'in warhorses and the Ashkevron hunters. Definitely not always within the realm of reality, but fun fantasy reading that allows for a horsie escape and plenty of adventure!
